Brazilian steak houses (Churascarias) are now fairly common in many major cities in the US. In Brazil, you can find these restaurants in every town. They are well know for the multiple waiters (Gauchos) that walk around with skewers full of tender, juicy and delicious cuts of meats. But for Brazilians, the salad table is as important as the meat.
One of the salads you can always find is the Salpicão de Frango, a chicken salad with peas, corn, green apple, carrots, crispy shoestring potatoes and a creamy mayonnaise dressing. This salad is not just delicious, it’s also very colorful. And you know, we first eat with our eyes!
This Chicken Salad, Salpicão de Frango, is a very versatile dish for many reasons. It can be prepared for a middle of week lunch or dinner but it is also commonly found on fancy buffets were it is plated in interesting shapes. You can always find some Salpicão de Frango in a potluck setting since it’s a crowd pleaser and easy to make. This is one of the dishes you that my family would always have when we got together during the weekends.
The other advantage of this dish is that you can use ham, turkey or you can leave the meat out if you have vegetarians in your family. My husband just told me today that he prefers the ham version because he enjoys the saltiness of the ham. Guess what he is having for Thanksgiving leftovers this year?

Brazilian Chicken Salad – Ingredients
- 1 lb. of chicken breast (can be substituted with deli chicken or ham)
- 1 cup of shredded carrots
- 1/2 medium sweet onion diced (can also use red onion)
- ¼ cup of chopped green onions
- 1 oz package of frozen corn thawed
- 1 oz package of frozen peas thawed
- 1 Green Smith apple chopped
- 1 clove of garlic minced
- ¼ cup of chopped parsley
- 2 cups of mayonnaise
- 1 can (7.6 fl oz) of Nestle Table Cream, 7.6 Ounce
- 1 tsp of French mustard
- 2 cups of shoestring potato ( Utz Potato Stix 15 Oz (2 Pack))
- Salt and pepper to taste
Brazilian Chicken Salad – Instructions
In a big bowl combine the chicken, carrots, onions, corn, peas and apples and 1 cup of the potatoes.
In a separate bowl, mix the garlic, parsley, mayonnaise, mustard, table cream and mustard until it’s all combine. Add salt and pepper to taste.
Spread the dressing over the salad. Mix well until all the ingredients are fully coated. Cover the salad with the remaining 2 cups of potato strings.Share this post with friends:
